The American Bistro is back in the Fowler Dining Room this Fall with some new menu items to choose from, we hope you will come in to support the students and to try some of their new creations.

As a reminder the Fowler Dining Room and kitchen are classrooms. The classes in the Fowler Dining Room this Fall are CUL 123 American Bistro and Advanced Food and Beverage HOS 252 with competencies and objectives related to 脿 la carte dining. The menu is patterned after modern and seasonal bistro fare. We have a small menu of offerings from which to choose. The students serving you learn to take and submit orders, write tickets, serve food and beverages, and interact with both the customers and the kitchen staff. The students in the kitchen learn how to correctly do mise en place (everything in its place-a culinary process in which ingredients are prepared and organized before cooking) and set up a kitchen station, manage workflow, proper cooking techniques, and plating food 脿 la minute (prepared and served immediately: not prepared in advance).

We prioritize high-quality, local, and sustainable ingredients whenever possible, and use authentic imported items when essential to a dish. Everything is 100% handmade, not processed, which results in ingredient costs that are well above industry averages鈥攂ut this reflects our commitment to delivering exceptional value and quality to our guests and students alike.

The Fowler Dining Room will resume lunch service Tuesday, September 2nd, and will run Monday through Thursday until December 11th. First seating will be at 11:30am and last seating will be at 1:00pm; booked in 15-minute increments. We recommend allowing two hours for service.

When making a reservation please include any dietary restrictions and/or allergies as this is required information needed ahead of your reservation to best accommodate you. Although we always try our best, we cannot guarantee same-day allergy and/or dietary restriction requests.
